STEP 1.1- wash and remove stem from spinach leaves. In a bowl combined gram flour and a pinch of salt along with sufficient water to make a dropping consistency batter.
STEP 2.2- Heat oil in a kadhai. Dip each spinach leaf in a gram flour batter and coat it completely. Gradually put them into hot oil and deep fry until golden brown in color on low flame. Drain and keep them on an absorbent paper. Fry all spinach leaves like this.
STEP 3.3- To make the paalak patta chaat arrange the fried spinach leaves un a plate. Place onions and potatoes on each of the spinach leaves. Next spread green chutney and tamarind chutney as per your taste. Top this with curd.
STEP 4.4- sprinkle chopped ginger- green chili. Finally sprinkle red chili powder, cumin powder, salt and chaat masala powder. Garnish with potato sev and chopped coriander leaves and serve immediately.
