STEP 1.Break Eggs into a bowl, add salt, red chilli powder & beat well.
STEP 2.Heat a pan brush some oil, pour 2 tbsp of egg mixture, spread all over the pan roll out with a spatula & keep aside into this pan. Pour another 2 tbsp of egg mixture into the same pan, spread evenly & roll out along with prepared roll. Keep aside into the same pan, brush oil, again pour 2 tbsp of egg mixture & spread evenly & roll out along with prepared roll, make a big fluffy egg roll with entire egg mixture, followed by same method. Take out the egg roll & keep aside.
STEP 3.Boil Cashews & onion chopped into water for 3-4 min. Cool completely & blend into smooth puree.
STEP 4.Heat ghee into a pan, add caraway seeds, cinnamon, black Cardamom, green Cardamoms, cloves until crackle. Add Garlic, Ginger paste soutee for 2 min. Then add Cashew Onion puree, coriander powder, cumin powder, kashmiri Mirch powder & salt to taste, mix together properly & cook for 5 min or until oil separate from masalas. Add Curd, white pepper powder cook another 2-3 min. Add water as required, for thick consistency of the gravy. Add Sugar chopped fresh coriander leaves, garam masala powder, mix properly.
STEP 5.Cut the prepared Egg Omlette roll into thick pieces. Add the prepared omlette roll pieces into the gravy & cook for another 2 min.
STEP 6.Serve into a serving platter, garnish with fresh cream, some chopped coriander leaves & chopped green chillies. Enjoy with steam Rice or Roti.
