Ingredients for Khatta mitha Masala pin wheel Mathri ( Fried & Baked ). Recipe

  • 1/5 cup maida
  • 1/5 cup Besan(Gram Flour)
  • 1.20 tbsp Oil
  • 0.80 tbsp Tamarind date chutney
  • 1/20 tsp Carom seeds
  • 1/10 tsp Red chilli powder
  • 1/20 tsp Turmeric powder
  • 1/5 tsp Kasuri methi powder
  • 1/10 tsp Roasted cumin powder
  • 1/10 tsp Garam masala powder
  • 1/20 tsp Salt
  • 1/20 cup water

Directions: Khatta Mitha Masala Pin Wheel Mathri ( Fried & Baked ). Recipe

  • STEP 1.Take maida in a mixing bowl, add 1/4 tsp carom seeds (slightly crusted by hand), 1/4 tsp, 3 tbsp Oil. Mix together until crumby texture. Now add 1/4 cup Water gradually & knead a stiff dough. Cover & Keep aside for 10 min.
  • STEP 2.Take Besan in a mixing bowl, add 1/4 tsp carom seeds (slightly crusted by hand), 1/4 tsp, kasoori methi powder, 1/4 tsp salt, red chilli powder, garam masala powder, roasted cumin powder, Turmeric powder, 3 tbsp Oil, add Tamarind Date Chutney. Mix together until crumby texture. Add 2 tbsp of water & knead a stiff dough.
  • STEP 3.On kitchen platform knead again for few minutes. Divide into two equal portions. Also divide the besan dough into two equal portions. First press the maida dough on kitchen platform, then spread water slightly on the dough. Now press slightly the besan dough & place on the maida dough. Now roll with rolling pin & make a large round. Roll out tightly & cut out the slices with a sharp knife. Slightly press with hand & make mathri shapes. Deep fry the mathris into hot Oil (Oil should not be too much hot). on medium flame until light golden brown.
  • STEP 4.Do same with remaining doughs followed by same method & arrange the prepared mathri doughs into a baking tray & bake at 180°c for 20 min.
  • STEP 5.Cool completely & enjoy with hot Tea or Coffee.
