They do not use onion , garlic in their food..
Here I have made kaddu in falahari style..

STEP 1.Peel the kaddu , dice it, wash it , keep aside . Do not put in water .
STEP 2.Take a wok , add ghee , heat it .
STEP 3.Add green chilli , saute it for a minute .
STEP 4.Add kaddu pcs now , mix it well .
STEP 5.In goes salt & red chilli powder . Stir fry it for a minute .
STEP 6.Lower the flame , cover it with the lid , cook it until kaddu is almost cooked .
STEP 7.Open the lid , increase the flame , add dhania patta , mix it well .
STEP 8.Cook it until dry . Turn off the flame , cover it for a minute .
STEP 9.Take out in a serving bowl , have it with kuttu poori...
