Ingredients for Lucknawi Aloo Dum.. Recipe

  • 2 Pieces med sized aloo
  • 2 tbsp Mustard oil
  • 0.33 Pieces Tejpatta
  • 0.33 Pieces Bari elaichi
  • 1.33 g laun
  • 2.67 Pieces kali mirch sabit
  • 1.33 Pieces Choti elaichi
  • 0.33 Pieces pc dalchini
  • 0.33 tsp Garlic paste
  • 0.17 tsp Ginger paste
  • 0.33 tbsp Onion paste
  • 0.67 tsp Dhania powder
  • 0.33 tsp Red chilli powder
  • 0.17 tsp Garam masala powder
  • 0.33 tbsp Desi Ghee
  • to taste Salt

Directions: Lucknawi Aloo Dum.. Recipe

  • STEP 1.Peel aloo , wash it , prick them , toss it with lil salt , keep aside.
  • STEP 2.Take a wok , add 1 tbsp oil , heat it.
  • STEP 3.Fry aloo till light brown, take out in a dish , keep aside.
  • STEP 4.Now add rest of the oil in the same wok, heat it .
  • STEP 5.Add whole garam masala, saute it for a minute .
  • STEP 6.Add ginger garlic paste , saute it until rawness is released. Add very lil water to avoid burning .
  • STEP 7.In goes onion paste , again add lil water , stir fry it for a minute .
  • STEP 8.Lower the flame , cover it with the lid , cook it until golden brown.
  • STEP 9.Stir in between.
  • STEP 10.Mix dhania powder & red chilli powder with lil water , add in the masala , also add salt , give a stir .
  • STEP 11.Cook it until oil has oozed out .
  • STEP 12.Now add garam masala powder , mix it well .
  • STEP 13.In goes fried aloo , stir fry it for a minute .
  • STEP 14.Sprinkle very lil water , cook it covered on low flame until oil has surfaced.
  • STEP 15.Open the lid , add desi ghee , mix well .
  • STEP 16.Now add 1.5 cup water , mix well .
  • STEP 17.Transfer it into a pressure cooker , place the lid , give 2 whistles on high flame .
  • STEP 18.Lower the flame , cook it for 7 minutes.
  • STEP 19.Turn off the flame , allow it to depressurise naturally.
  • STEP 20.Open the lid after 5 minutes .
  • STEP 21.Take out in a serving bowl , garnish it with chopped dhania patta and ginger juliennes .
