Masala poori aka ragda poori is a lip smacking good street food wherein crispy poori /paapdis are dunked in creamy aromatic peas gravy & topped with chutneys , onion & sev.
STEP 2.Next day discard soaked water...rinse once.
STEP 3.Add enough water, salt & 1 tsp turmeric ..cook till soft.
STEP 4.Heat oil in a pan.
STEP 5.Fry cumin & bay leaf.
STEP 6.Add spice powders & paste.
STEP 7.Fry for a min.
STEP 8.Add tomatoes..cook till mushy.
STEP 9.Add boiled peas.
STEP 10.Add salt to taste & water to adjust consistency.
STEP 11.Mash peas from back of spoon.
STEP 12.Add tamarind & jaggery.
STEP 13.Boil on low flame for 7-8 min.
STEP 14.Turn off flame.
STEP 15.While serving..
STEP 16.Break the poories in a plate.
STEP 17.Pour ragda over it.
STEP 18.Add green chutney & sweet chutney.
STEP 19.Sprinkle chopped onion , cilantro & sev.
STEP 20.Serve immediately.
