Baigan bharta is north indian recipe though cooked in all india with different names of different regions. Its similar to Mediterranean Baba Ganysh.. Bit smoky, spicy and tangy.
STEP 1.1 Roast the eggplants. Peel off the skin as it becomes cool. Chop onion, garlic, chilli and tomatoes. Keep all the ingredients ready.
STEP 2.Take a kadai and put on gas adding oil. Add onion, garlic and chilli as oil become hot and saute it.
STEP 3.Now add all dry masala and give it a good stir. Add chopped tomatoes and salt. Let it cook for 5-7 minutes or till it becomes mushy. Then add chopped or mashed eggplants.
STEP 4.Cook for another 4-5 minutes or till oil releases from it. Finally add garam masala and chopped fresh coriander leaves. Its time to serve hot with bajra roti, butter milk, achar, papad, etc.
