Ukadpendi is a traditional Maharashtrian recipe, specifically from Vidarbha in Maharashtra, which is made using groundnut oil and wheat flour which can be had in breakfast, lunch or dinner, it can also be had as a snack.
STEP 1.In a iron wok or kadhai, heat up to the oil on low flame. Add mustard seeds and let it crackle. Add curry leaves and finely chopped onions. Cook till onions turns translucent. Now add finely chopped garlic and green chilli. Cook for a minute.
STEP 2.Add spices like turmeric powder, red chilli powder, dhania jeera powder and salt. Mix all well and cook for 2 minutes.
STEP 3.Gradually add flour and mix well. Roast flour very well on low flame continuously stirring it. Make sure flour doesn't get burn.
STEP 4.Further add curd and hot water. Mix well and cook for a minute. Add some chopped green coriander leaves and again mix well. Switch off the flame.
STEP 5.Healthy delicious Ukadpendi is ready to serve. Garnish with green coriander leaves and serve hot with pickle, green chillies or as it is, which ever way you like.
