Directions : Sichuan Style Razor Clams Recipe

STEP 1.1 in a wok, heat 2 tbsp oil, add 2 tbsp sichuan peppercorns, 8 cloves finely chopped garlic, 40 gm finely chopped ginger, 7 finely chopped dried red chillies and stir fry for 30 seconds.

STEP 2.2 add 1 small thinly sliced onion and stir fry for 1 minute.

STEP 3.3 add the razor clams in the shells, add 1 tsp cooking wine, 1 tbsp light soy sauce, 1 tbsp sugar, salt to taste and stir together.

STEP 4.4 cover and sook for 2 to 3 minutes.

STEP 5.5 remove the cover, add 25 gm chopped coriander and stir.

STEP 6.6 transfer to a dish and serve hot.
