Ingredients for Sichuan Style Razor Clams Recipe

  • 1 kilogram Razor clams
  • 8 No.s Garlic Cloves
  • 40 gram Ginger
  • 2 tablespoon Sichuan peppercorns
  • 1 No.s Small Onion
  • 7 No.s Dried red chillies
  • 25 gram Coriander
  • 1 tablespoon Light soy sauce
  • 1 teaspoon Cooking wine
  • 1 tablespoon Sugar
  • As required Salt

Directions: Sichuan Style Razor Clams Recipe

step 1

  • STEP 1.1 in a wok, heat 2 tbsp oil, add 2 tbsp sichuan peppercorns, 8 cloves finely chopped garlic, 40 gm finely chopped ginger, 7 finely chopped dried red chillies and stir fry for 30 seconds.

step 2

  • STEP 2.2 add 1 small thinly sliced onion and stir fry for 1 minute.

step 3

  • STEP 3.3 add the razor clams in the shells, add 1 tsp cooking wine, 1 tbsp light soy sauce, 1 tbsp sugar, salt to taste and stir together.

step 4

  • STEP 4.4 cover and sook for 2 to 3 minutes.

step 5

  • STEP 5.5 remove the cover, add 25 gm chopped coriander and stir.

step 6

  • STEP 6.6 transfer to a dish and serve hot.
