For the Filling
2 tablespoon Oil
0.5 pound pork chorizo
1 potato diced, peeled, and cooked
For the Sauce
4 guajillo seeded, deveined, stems removed
5 cup Water
0.25 white onion
1 clove garlic
0.25 teaspoon Salt
To Assemble the Sandwich
4 telera breads
0.25 cup oil for frying
shredded lettuce as desired
crema mexicana as desired
Mexican salsa as desired

Directions : Pambazo Recipe

STEP 1.For the filling, heat 2tbsp oil in a pan

STEP 2.Add the chorio and cook for 4mins

STEP 3.Drain the excess fat and return the chorizo to the pan

STEP 4.Add cooked potatoes in the pan and mash until smooth

STEP 5.Set aside until ready to use

STEP 6.For the sauce , to a stock pot add guajillo chilies and 4 cups of water

STEP 7.Boil for 5mins

STEP 8.Discard the water

STEP 9.To a blender add the chilies and water,garlic cloves and salt

STEP 10.Pour sauce in a dish

STEP 11.Cut the telera bread in half

STEP 12.Dunk the bottom in the sauce

STEP 13.In a frying pan, heat oil and add the bread and fry for 1mins

STEP 14.Place in a plate and chorizo on the bottom of the bread

STEP 15.Top with lettuce,crema mexicana and salsa

STEP 16.Serve and enjoy
