• 1 Brown onion roughly chopped
• 2 Carrots roughly chopped
• 3 part Spring onions whitesliced
• 4 Garlic Cloves
• 1 Knob ginger roughly chopped 6cm knob
• 4 Star anise
• 1 stick Cinnamon
• 4 Cloves
• 0.5 teaspoon Black peppercorns
• 1 tablespoon Coriander seeds
• 1 bunch Coriander roots and stalks chopped leaves reserved
• 1 tablespoon Brown sugar
• 3 tablespoon Fish sauce
• 2 Limes juiced
• 250 gram Rice stick noodles
• 50 gram Bean Sprouts
