STEP 3.Boil 8 cups of water and put the oxtails in it. During simmering check the water level for about every 30 minutes
STEP 4.Add ginger slices, schezuan pepper, star anise, green onions, wine, salt and simmer at low for 3 hours.
STEP 5.Take out the oxtails and remove fatty portions.
STEP 6.Boil the noodled for 1 minute and keep aside.
STEP 7.Blanch 3 oz of watercress and serve aside the noodles.
STEP 8.Scoop some beef broth to serving bowl. Add soy sauce topping, white pepper and one oxtail cut. Garnish with green onions.
