Ingredients For Golden Paneer with green dip Recipe
2 Litre milk
To Taste Salt
0.5 Tsp sugar
1 Tsp curd
1 Tsp black peppercorns
0.5 Tsp turmeric powder
1 Tbsp lemon juice
1 Tsp ghee
1 Cup mint leaves
2 Cups coriander leaves
2 g reen chili
1 Tbsp oil
10 Pieces ceshews
1 Inch ginger(chopped)
To Taste Salt
0.5 Tsp sugar
1 Tbsp curd
1 Cup remaining paneer water
0.5 Cup curd
To Taste Salt
0.5 Tsp sugar
0.5 Tsp gram flour
1 Tbsp ghee
0.5 Tsp cumin seeds
0.25 Tsp asafoetida
3 Pieces Dry red chili
1 Pieces Tomato
Directions : Golden Paneer with green dip Recipe
STEP 1.For paneer :-
STEP 2.In a large vessel, add milk, salt to taste, sugar and stir well. Add crushed black peppercorns, turmeric powder and keep stirring. Simmer the milk for 10-15 minutes, Add curd and approx 1 lemon juice and keep stirring on a slow flame for 2-3 minutes.
STEP 3.Add ghee and stir well. Once the milk starts to curdle, switch off the flame, stir & wait for 3-4 mins. Add a little water and stir well. the water has to separate completely. Drain curdled milk over muslin cloth, rinse with cold water & squeeze off excess
STEP 4.Shape the paneer into a block and keep a heavy object over it. Press for 30 mins and Refrigerate or until the paneer sets completely and then paneer cut into cubes.
STEP 5.For Green dip :-
STEP 6.In a grinder jar, add Mint leaves, Coriander leaves, Green chilli, Oil, 10-12 Cashewnut, Ginger. Add Garlic cloves, Salt to taste and Sugar and grind it into a smooth paste. Add Curd and mix it well. Keep aside for further use
STEP 7.Curd Mixture:-
STEP 8.In a bowl, 1cup add remaining Paneer water, Curd, Salt to taste, Sugar, Gram flour and mix it well.keep aside.
STEP 9.For Tadka :-
STEP 10.In a pan heat Ghee, add cumin seeds, dry red chillies and let it splutter. Add curd and gram flour mixture & stir well on slow flame. Add tomato and cook for 2 minutes.
STEP 11.Now add prepared green paste and mix well. Cook on a slow flame until the gravy thickens, add prepared turmeric flavour paneer & mix well. Cook for 2-3 minutes.Turn off the flame.
STEP 12.Serve hot with rice and paratha.
