Ingredients for Rajasthani Onion kachori Recipe

  • 1/2 Cups All-purpose flour(maida)
  • 1/4 Tsp carom seeds (Ajwain)
  • 1/4 Tsp Salt
  • 0.06 Cup Ghee
  • 1/2 Tbsp oil
  • 1/4 Tsp cumin seeds
  • 1/4 Tsp Asafoetida
  • 1/4 Tbsp (crushed) Coriander seeds
  • 1/4 Tbsp Fennel
  • 1/4 Tbsp grated ginger
  • 1/2 Pieces chopped green chilli
  • 1/4 Tbsp Red chili powder
  • 1/4 Tbsp Coriander powder
  • 1/4 Tsp black pepper powder
  • 1/4 Tsp Sugar
  • 1/4 Tsp dry mango powder (Amchur powder)
  • 1/4 Tbsp Kasuri methi
  • 1/4 Tbsp gram flour
  • To Taste Salt
  • 3/4 Pieces Onions
  • 3/4 Pieces medium size boiled potatoes
  • As Required Oil for frying

Directions: Rajasthani Onion Kachori Recipe

  • STEP 1.Take flour in a big vessel and add salt, carom sedds and ghee to the flour and mix it well.

  • STEP 2.Add water slowly and gradually, knead a semi soft dough. Cover it with a damp cloth and rest it for 30 minutes.keep aside.

  • STEP 3.Now will prepare the stuffing. Heat oil in a pan add cumin seeds and allow it to splutter, add hing, crushed coriander seeds, fennel., ginger and green chillies, Sauté for a minute.Add onions and salt, sauté and cook until they are translucent

  • STEP 4.Add red chilli powder, coriander powder, black pepper powder, amchur powder,sugar and gram flour, cook till the masala and gram flour is roasted.

  • STEP 5.Add boiled and mashed potatoes, green chilli and salt to taste, mix well. stir and cook for 4-5 minutes.Add kasuri methi mix well. Turn off the flame. Cool down the mixture completely.

  • STEP 6.When the onion mixture cools down, take a large spoonful of mixture and shape into balls. Now knead once again dough and make equal lemon sized balls from the dough.

  • STEP 7.Now take one dough ball and make it like a basket with the help of fingers. Put a onion mixture ball in this basket of dough and lift the dough from all sides and close it properly.

  • STEP 8.Flatten with light hands into a semi thick disk. prepare all the kachoris in this way.Fry them on low heat for 15-18 minutes or until crisp and golden brown.

  • STEP 9.Remove on an absorbent paper.

  • STEP 10.Serve with tamarind chutney and fried green Chiles
