Ingredients For Vietnamese Braised Eggplant And Mixed Vegetables Recipe

• 2 tablespoon Peanut, soybean, canola, grapeseed, or other neutral oil
• 2 Cloves garlic, finely chopped
• 2 Thai or other small, hot chilis, finely chopped
• 2 tablespoon Finely chopped lemongrass
• 2 Green onions, roughly chopped
• 1 teaspoon Ground turmeric
• 3 cup Around of vegetables cut into bite-size piecesive used red peppers, green beans, mushrooms , and carrotsand theyve all worked very well. squash or sweet potatoes would be interesting , as would strips of cabbage or leafy greens. in the case of the pictures here, i used 2 large red peppers
• 2 pound Around eggplant , ends trimmed and remainder cut into large bite-size pieces
• 15 ounce 1 - can of tomatoeswith its juices or 2-3 juicy ripe tomatoes, quartered, plus 1 cup water
• 0.25 cup Fish sauce
• 2 tablespoon Brown sugar
• Roughly chopped cilantro and/or basil, for serving
