  • 1/2 Cloves garlic, finely chopped
  • 1/2 Thai or other small, hot chilis, finely chopped
  • 1/2-3/4 tablespoon Finely chopped lemongrass
  • 1/2 Green onions, roughly chopped
  • 1/4 teaspoon Ground turmeric
  • 3/4 cup Around of vegetables cut into bite-size piecesive used red peppers, green beans, mushrooms , and carrotsand theyve all worked very well. squash or sweet potatoes would be interesting , as would strips of cabbage or leafy greens. in the case of the pictures here, i used 2 large red peppers
  • 1/2 pound Around eggplant , ends trimmed and remainder cut into large bite-size pieces
  • 3.75 ounce 1 - can of tomatoeswith its juices or 2-3 juicy ripe tomatoes, quartered, plus 1 cup water
  • 0.06 cup Fish sauce
  • 1/2 tablespoon Brown sugar
  • As required Roughly chopped cilantro and/or basil, for serving
