Directions: Ca Tim Kho To (vietnamese Braised Eggplant With Soy Sauce) Recipe
STEP 1.Cut ½ of a pineapple into small pieces. Chop 1 bottom half of a leek. Fill a large bowl with water. Then add some lime juice about 1-2 tbsp. And ½ tsp. Salt. Rinse 2 long egg plants, cut it, and put into the water to assist the egg plants to keep. In a pan add in the pineapple.
STEP 2.Add during a pinch of kosher salt and 3/4 tsp. Add the sugar mix and let it cook for about 2-3 minutes.
STEP 3.In a different pan add in 2 tbsp. Olive oil and chopped leek. Saute until slightly brown. then add 3/4 cup soy sauce, a pinch of salt, 2 tsp sugar, 2 tbsp water, fried tofu, 1 tbsp vegetarian stir-fry sauce, and cooked pineapple.
STEP 4.Rinse and wash the eggplants then add them into the pan. Then cover the lid to let it cook for about 7 minutes. Optional add-in chili pepper. Enjoy with the family meal.
