STEP 1.Heat oil/ghee. Add mustard seeds, urad dal, Channa dal, cashew nuts, red chilly, curry leaves, ginger. Saute it.
STEP 2.Add chopped onions and saute till golden brown.
STEP 3.Add chopped tomato, beans and carrot, salt and turmeric powder(Boil water separately with little salt and add soya chunks. While adding soya chunks switch off stove and close the lid). Squeeze the water from chunks and cut into pieces. Add along with the veggies and saute for 2mins.
STEP 4.Add water, salt and coconut. Check for salt before adding vermicelli.
STEP 5.Once the water starts boiling add vermicelli and cook till it gets soft.
STEP 6.Garnish with coriander and mint leaves. Mint leaves is optional.
STEP 7.You can toast bread slice, cut into pieces and add at last. Also you can boil soya chunks and add with veggies. This step is optional.
