STEP 1. in a large mixing bowl add 10 ice cubes and 1 litre cold water.
STEP 1.in a smaller bowl add 5 ice cubes and 5 gm thinly sliced ginger with 200 ml cold water. remove the fat from under the skin of 600 gm chicken legs
STEP 2.then place them in a steamer. Cover and steam for 20 minutes. in a pan heat 1tbsp oil, add 2 tsp sichuan peppercorns and fry for 5 minutes. Take the pan off the heat.
STEP 3.after 20 minutes remove the chicken legs from the steamer and place them in the large bowl of ice cold water. Let them cool completely. to make the dressing, in a large bowl place 150 gm cucumber cut into small chunks 4 tsp chili oil, 2 tsp sugar, 2 tsp white vinegar, 2 tsp light soy sauce, 1 tsp cooking wine.
STEP 4.add the fried sichuan peppercorns and 2 tbsp sesame seeds, 50 gm roasted peanuts, 1 tsp chili flakes and 2 finely chopped spring onions. lastly add 5 gm finely chopped ginger and 5 gm sliced ginger with soaking liquid and salt to taste.
STEP 5.mix all the ingredients together. chop the steamed chicken legs into chunks. place them in a serving dish and generously spoon dressing over the chicken pieces.
