STEP 1.into a pressure cooker add 1cup pitted dates,½ cup jaggery, ¼ cup deseeded tamarind and 1 cup of water.

STEP 1.pressure cook for 3 to 4 whistles and allow the pressure to release naturally.

STEP 1.blend the ingredients into a coarse mixture.

STEP 1.add 1 tsp red chlli powder, 1 tsp black salt,1 tsp dry ginger powder, 1 tsp cumin powder, salt to taste and a little water. Mix well.

STEP 1.simmer for 3 to 4 minutes and turn off the heat.

STEP 1.allow to cool completely and store in the refrigerator.
