STEP 1.1 - heat some milk in a pan and add cornmeal, cinnamon, nutmeg, pimento and salt.
STEP 2.2 - stir cook until it thickens.
STEP 3.3 - add evaporated milk, vanilla and sugar to this, give it a stir and reduce the heat.
STEP 4.4 - simmer until it thickens and then discard the cinnamon stick.
