Bengali preparation of roasted cauliflower in basmati rice and spices. It is tempred in mustard oil, whole spices and dry fruits which further enhances the taste.
STEP 1. In a preheated pan add 1 tbsp mustard oil, ¼ cup cashew nuts and roast till cashews turn brown and crisp.
STEP 2. Add ¼ cup raisins and saute till they puff up. Keep aside.
STEP 3. In a pan hear 1 tsp mustard oil, add 2 cups cauliflower florets, ¼ tsp turmeric powder and salt to taste. Mix well to coat the cauliflower with the haldi. Saute for a few minutes.
STEP 4. Sprinkle a little water and cover and cook for 4 minutes. After a few minutes check the vegetable, cauliflower should be cooked but firm. Keep aside.
STEP 5. Heat a pan and add 1 tsp mustard oil, ½ tsp cumin seeds and allow to splutter.
STEP 6. Then add 6 cloves, 1 inch stick cinnamon, 2 green cardamom and 2 broken bayleaf. Stir for a few seconds until aromas are released. Add 2 inches ginger finely chopped and 2 green chillies finely chopped. Stir for a few seconds.
STEP 7. Then add ¼ cup basmati rice or Govind Bhog. Roast well for about 3 minutes .
STEP 8. Add2 finely chopped tomatoes, 1 tsp cumin powder , 2 tsp coriander powder and mix well.Add 1 tsp sugar and salt to taste.
STEP 9. Then add ½ cup water and saute for 1minute. Cover and cook till rice is done.
STEP 10. When rice is done, add the roasted cauliflower and 1/4 cup green peas. Stir well.
STEP 11. Next add1 tsp garam masala and saute for 3 to 4 minutes till well combined.
STEP 12. Lastly stir in roasted cashew nuts and raisins. Chal Gopi is ready.
