• 1 cup 25 to 28 dried red chilies
• 1 cup Hot water to soak chilies
• 0.25 cup Oil
• 2 tablespoon Garlic chopped finely
• 1 tablespoon Ginger chopped finely
• 8 Sichuan peppercorn crushed or ground
• 3 tablespoon Onions chopped very finely 1 small
• 0.5 cup Water for sauce
• 1 tablespoon Sugar
• 0.75 teaspoon Salt
• 0.75 tablespoon Soya sauce prefer naturally brewed soy sauce
• 0.75 tablespoon Vinegar
• 0.25 teaspoon Pepper powder
• 0.25 cup Chopped Celery
