• 36 ounce Canned plum tomatoes drained, seeded, and chopped, juices reserved
• 1 teaspoon Sea salt plus more to taste
• 3 tablespoon Minced basil leaves
• As required Freshly ground black pepper to taste
• 1 Basic polenta
• 0.5 pound Semi soft pecorino cheese such as fior di sardegna or tuscan caciotta, or young spanish manchego, shredded
