Phodnicha Bhat, which can be said as Maharashtrian style fried rice, is usually made using leftover rice. It is a quick, easy, and tasty rice dish. It can be had either for breakfast or for lunch.
STEP 1.Take the cooked rice in a bowl. Add Turmeric powder, Malvani masala and salt. (If Malvani Masala is unavailable, combination of Kashmiri chilli powder and Garam masala powder can be used.) Mix well and keep aside.
STEP 2.Heat oil in a pan. Add mustard seeds. When they begin to splutter, add cumin seeds, asafoetida followed by crushed garlic. Fry until garlic turns light brown in color. Then add chillies, curry leaves and sliced onion. Fry until onion turns light brown in color. Add about a tbsp of chopped coriander leaves and mix.
STEP 3.Now, add rice and mix well. Check for salt. Cook for a few minutes on a low-med heat. Lastly add remaining coriander leaves and mix.
STEP 4.Serve with pickle, papad and raita.
