A pork kachampuli dish also known as Pandi curry in South India. The speciality is its rich flavours and creamy consistency. The recipe is a famous dish of Coorg.
STEP 1.1 take 1.5 kg pork in a bowl, add kachampuli 4-5 tbls, red chilli powder 4 tbls, turmeric powder 2 tbls and salt to taste. Mix it well and then marinate it for an hour in the fridge.
STEP 2.2 in a grinder, add 15 small red onions, cinnamon sticks, clove, star anise, ginger garlic clove, green chillies, curry leaves, coriander leaves and add ½ cup of water to it. Grind. Keep the paste aside.
STEP 3.1 take a pressure cooker. Add oil to it. And then curry leaves. Now add the marinated pork in the cooker and close the cooker till 4-5 whistles. Open the cooker and remove the pork fat.
STEP 4.2 in another pan, add oil and the grinded masala paste to it. Salt to taste. Mix well. Sort. Add pork masala and cook till light brown. Now add cooked pork into this masala and mix well. Sort for 5-10 minutes and serve hot.
