STEP 1.In a large pot heat 1 tbsp oil and add 1 tsp mustard seeds let the seeds splutter then add ½ tsp urad dal, ½ tsp cumin, few curry leaves and 10 cashew nuts.
STEP 2.Saute for 2-3 minutes then add 1 inch grated ginger, 2 chilies and ½ chopped onion, ½ chopped carrot, 5 beans, ¼ capsicum, 2 tbsp peas, ½ tsp turmeric and ½ tsp salt.
STEP 3.Add 2 tbsp water, cover the pot with lid and simmer for 5 minutes.
STEP 4.Now add 1 cup water and get it to a boil. If using instant oats, just add ¼ cup water.
STEP 5.Once the water comes to a boil, add in roasted oats and mix well.
STEP 6.Mix until the oats absorb all the water. Cover with lid and let throats cook
STEP 8.Serve in a bowl and enjoy vegetable oats upma.
