• 3 pound Bone in skin on chicken drumstick or whichever part of the chicken you like
• 1 tablespoon Cooking oil
• 500 milliliter Coconut water more if cooking on the stove
• Generous amount of oil for frying
• 6 Cloves garlic peeled and smashed
• 2 Stalks lemongrass smashed
• 3 Bay leaves or use 6 dried bay leaves
• 2 tablespoon Coriander powder
• 4 tablespoon Galangal powder or use 2 tbsp ground fresh galangal
• 1 teaspoon Salt
• 0.5 teaspoon Ground white pepper
• 150 gram Coconut sugar
