Risotto is a very classy dish and can be made with a variety of meats and a whole lot of different vegetables.Enoki Mushroom are those little thin white ones that have a cute little button looking top.
STEP 2.Fry 100 gms enoki mushrooms until they are golden brown in colour.
STEP 3.Fry arborio rice in 1 tbsp of olive oil and 2 tbsp of butter and add 6 finely chopped garlic and 1 finely chopped onion to it and fry them.
STEP 4.Put in lamb stock and let it cook.
STEP 5.Fry 2 portobello mushrooms for 15 minutes
STEP 6.Add wine to risotto and also add enoki mushroom to it.
STEP 7.Whisk 1 tbsp balsamic and 2 tbsp olive oil well and pour it into portobello mushrooms and keep it for 15-20 minutes in freeze.
STEP 8.Fry portobello mushrooms in medium flame.
STEP 9.Add 2 tbsp chopped parsley and grated parmesan cheese on risotto and stir.
STEP 10.Use some arugula leaves for serving.
