STEP 1.Take fresh spinach leaves, trim the stem and clean properly.
STEP 2.Spread the leaves in a tray to make the leaves dry. As we are going to deep fry them.it is necessary to make the leaves dry.
STEP 3.Chop the leaves very thin with a sharp big knife.
STEP 4.Heat oil in a deep pan to deep fry the spinach.
STEP 5.When oil is very hot,carefully drop the chopped spinach to oil in batches. Don't drop more leaves, as they contain a lot of moisture and if you drop more,oil may get cold and leaves may not fry nicely. Fry them quickly in very hot oil.
STEP 6.After frying 30-40 seconds remove them from oil with a perforated spatula.
STEP 7.Keep them in a kitchen towel to remove excess oil.
STEP 8.Repeat the same process to fry all the spinach.
STEP 9.In a pan dry roast some white sesame seeds.
STEP 10.Add dry roasted sesame seeds, chilli flakes, sugar and salt to the fried spinach and mix lightly.
STEP 11.Serve immediately as snack or appetizer. They are so crispy and light.
