#Mango Sushi is one of the most popular Japanese dish. Gluttonous rice is the main ingredients of sushi with different veg and non-veg stuffing. Glutinous rice is very popular in North East India from where I belong to, and it has been used to make many desserts. In mango season we love to eat glutinous Rice with mango and milk. With that idea, I made these delicious desserts with mango, coconut milk and glutinous rice. These are pure vegan and healthy dessert that you must try during this mango season.

  • 1/4 cups Glutinous rice (Sushi rice)/Sticky rice
  • 0.06 cup Mango puree
  • 0.06 cup Thick coconut milk
  • 0.13 Pieces Fresh ripe mango
  • 0.13 teaspoon Sugar
  • 0.13 A Pinch Salt
  • 0.13 A Pinch Red chilli flakes
  • 0.03 teaspoon chat masala
  • 0.13 tablespoon mixed black & white Sesame seeds
  • 0.13 teaspoon Dessicated coconut

  • STEP 1.Wash, rinse and soak glutinous rice with water for at least 3-4 hours.
  • STEP 2.After soaking, drain the rice and place in a heavy bottom saucepan with 1/2th cup of water.
  • STEP 3.Cover and cook in low heat for about 20-25 minutes. Don't stir the rice in between. They will cook with the steam in low heat. This is the trick to cook glutinous rice. Alternately you can steam them in a steamer by placing the rice in a muslin cloth.
  • STEP 4.For the mango sauce place 1/2 cup of thick coconut milk and a half cup of mango puree in a pan.
  • STEP 5.Place the pan in stovetop and cook the sauce in medium-low heat by stirring occasionally. Add sugar and a pinch of salt. Adjust sugar as per your taste.
  • STEP 6.When the mixture comes to a thick saucy consistency, remove from heat. It will take about 8-10 minutes to make the sauce.
  • STEP 7.When the rice cooks completely, remove from heat and transfer to a mixing bowl.
  • STEP 8.Add half of the mango sauce to the rice and mix well.
  • STEP 9.Cover and keep aside for 10-15 minutes so that the rice absorbs the sauce completely.
  • STEP 10.In the meantime dry roast white and black sesame seeds.
  • STEP 11.After roasting add in 1 teaspoon of desiccated coconut and mix.
  • STEP 12.Peel and cut a ripe mango in small cubes.
  • STEP 13.To this add in 1 teaspoon of prepared sesame seeds coconut mixture. Mix well.
  • STEP 14.Also add in 1 tablespoon of the mango sauce, 1 dash of chilli flakes and 1/4th teaspoon of chat masala. Mix well.
  • STEP 15.To make the rice balls, grease your palm and take a lime size portion of the prepared rice. Make a ball with a cavity.
  • STEP 16.Stuff 1 teaspoon of the prepared fresh mango.
  • STEP 17.Seal the cavity and roll it on the sesame seeds coconut mixture. Place it in a dish.
  • STEP 18.Similarly, make all the rice balls.
  • STEP 19.Serve this delicious rice balls with some additional mango sauce. They are absolutely amazing to taste.
