Ingredients for Tomato Rice Recipe

  • 1/4 Pieces Large onion finely chopped
  • 1/4 teaspoon Ginger-garlic paste
  • 1/4 Pieces Medium-sized potatoes diced
  • 1/4 teaspoon Coriander-cumin powder
  • 0.13 teaspoon Garam masala
  • 0.13 teaspoon Red chilli powder
  • 1/4 cup Long grain Basmati rice washed and
  • 1/2 Pieces Large tomatoes roughly chopped
  • handful shredder Purple Cabbage
  • 1/4 cups Vegetable stock or water
  • 1/4 tablespoon Tomato ketchup
  • 0.13 teaspoon Sugar
  • As Required Salt
  • 1/2 tablespoon olive oil
  • 1/4 Tsp More olive oil
  • As Required For Ganishing Some cherry tomatoes to garnish

Directions: Tomato Rice Recipe

  • STEP 1.Heat some vegetable oil in a pot over medium heat. Once hot, Saute the onions until they are light and translucent.
  • STEP 2.Add in ginger-garlic paste and saute for few seconds.
  • STEP 3.Then add in the diced potatoes and give it a nice stir, cook for 5 minutes.
  • STEP 4.Add all the spices stir and combine well.
  • STEP 5.Take the roughly chopped tomatoes and to a blender and blend to make puree.
  • STEP 6.Also make vegetable stock by boiling some carrot, onion and green peas with salt,pepper and 1 cup of water.
  • STEP 7.Add Tomato puree and vegetable stock to the pot with potatoes. Season it with salt and sugar and bring it to boil.
  • STEP 8.Also add in shredded purple cabbage.Its just optional to use cabbage, you can omit it or can use other vegetables like peas, carrot etc.
  • STEP 9.Then add the rice, give a good stir and bring to boil again.
  • STEP 10.Turn the heat down to medium-low, cover and let it simmer until rice cooks completely.
  • STEP 11.Before removing, fluff the rice with a spatula.
  • STEP 12.Remove from heat and let it stand for 10 minutes.
  • STEP 13.Serve this one pot rice dish warm with cucumber raita and pan seared cherry tomatoes.
