• 2 cup Diced eggplant
• 1 Small zucchini, diced
• 0.25 teaspoon Salt
• 1 can Black beans, drained, rinsed
• 1 can Diced tomatoes with italian style herbs, undrained
• 1 ounce Shredded fresh asiago or parmesan cheese
• 2 tablespoon Chopped fresh parsley
