STEP 1.Soak 1 cup chana dal in water for 4 to 5 hours

STEP 1.In a mixing bowl add 1 onion finely chopped or cut into long strips, 2 green chillies finely chopped, 1 inch ginger grated, 3 cloves garlic grated, 1 cup finely chopped spinach, 1 handful of soaked chana dal

STEP 1.In a mixer grinder add 1 cup washed and soaked and drained chana dal (bengal gram) and blend to a coarse texture.

STEP 1.Add ground chana dal to the chopped vegetables in the mixing bowl, add 1 tbsp cumin seeds, salt to taste. Mix well to combine all the ingredients.

STEP 1.Heat oil in a deep pan or kadai for deep frying, take small portions of the vadai mixture and shape and bring it together into flat discs.

STEP 1.Slip the vadai into the hot oil and fry till evenly brown and crisp from all the sides. Drain the excess oil and serve.
