Podi is a Powdered Dal based condiment or seasoning, Mixed with Rice/ Idli and spoonful of ghee or sesame oil. Karivepaku podi is prepared with curry leaves as main Ingredient.
STEP 1.In a pan add ½ tbsp of oil, add wash and dried 2 cups of curry leaves and saute for 2 minutes at low flame, until the leaves are crunchy.
STEP 2.Remove the curry leaves from the pan and keep aside, add ½ tbsp of oil, 1tbsp of ground nuts and saute for 2 minutes at low flame.
STEP 3.Then in the same pan add ½ tbsp of oil, 2 tbsp of chana dal, 1tbsp of urad dal, 1tbsp of coriander seeds, ½ tbsp of cumin seeds, 6 dry red chilies roasted ground nuts saute for 2-3 minutes and turn off the flame, add a pinch of hing and mix well.
STEP 4.In a mixer grinder add the prepared lentils/ dal mixture, roasted curry leaves, 4 garlic pods, a small tamarind piece and salt.
STEP 5.Grind and prepare a fine powder and store in an airtight container.
STEP 6.Or serve with rice as a condiment and enjoy.
