Ingredients For Farro and Sausage Stuffed Roasted Acorn Squash Recipe

• 3 Acorn squash, cut in 1/2, seeds and fibers removed
• Olive oil spray, i used my mister
• As required Salt and fresh cracked pepper to taste
• 0.5 cup Uncooked pearled farro, rinsed and drained
• 1.5 cup Reduced sodium chicken broth
• 2 Links raw sweet italian chicken sausage
• 0.5 tablespoon Olive oil
• 0.5 Large white onion, chopped
• 2 Celery stalks, chopped
• 4 ounce Sliced fresh mushrooms
• 2 Sage leaves, chopped
• Parsley, for garnish
