• 400 gram Skinless chicken fillets, thinly sliced
• 150 gram Smoked pork sausage, sliced
• 1 Onion, peeled and finely chopped
• 2 Garlic cloves, peeled and chopped
• 2 Celery stalks, chopped
• 1 tablespoon Cajun seasoning
• 1 teaspoon Dried Thyme
• 1 tablespoon Flour
• 600 milliliter Hot chicken stock
• 3 tablespoon Tomato puree
• 2 Ripe tomatoes, peeled and chopped
• Salt and freshly ground black pepper
• Boiled rice, to serve
