Ingredients For Black Bean Pasta Recipe

• 2 tablespoon Olive oil
• 1 Yellow onion diced
• 1 Red pepper diced
• 1 Green pepper diced
• 1 Yellow pepper diced
• 1 Orange pepper diced
• 4 Cloves garlic minced
• 2 Packets taco seasoning divided
• 1 Box rotini uncooked
• 1 Carton vegetable broth
• 2 cup Unsweetened almond milk
• 2 can Black beans drained and rinsed
• 1 can Corn drained
• 1 can Rotel drained
• 2 tablespoon Lime juice plus more to taste
• As required Salt to taste
• Cheese, sour cream, salsa, tortilla chips, shredded lettuce, etc. for serving, if desired
