STEP 1.In a pressure cooker add 1 tbsp of nutralite classic spread and let it melt. once it gets melted nicely then add 1 tsp cumin seeds, 1 inch ginger and 2 slit green chillies.
STEP 1.2saute till the onions become soft. There is no need to fully brown them.
STEP 2.3next add 1 cup cooked tomato puree, ½ turmeric powder, ½ red chilli powder, ½ garam masala powder and salt to taste and 1 tsp sugar to balance the sourness.
STEP 3.4next add 2 peeled and diced potatoes soaked in water to prevent discolouring. Drain the water. Sit to mix well. Cover and pressure cook the potatoes for 5 to 6 whistles. Turn off and allow the pressure to release naturally.
STEP 4.5open the cooker and check the aloo by lightly pressing it with the ladle. If the ladle easily cuts the aloo, then it is cooked. Add ½ cup fresh steamed green peas, ½ tsp kasuri methi and stir to mix well. Do a taste test for salt and spices and adjust accordingly.
STEP 5.6serve with tawa paratha.
