The Maratha empire has been etched in history as a rich period of culture and cuisine. With the great efforts Shivaji Bhonsle in the 17th century, Maratha kingdom became renowned in the country. Today, Maharashtra is quite famous for its chatpata street fare which includes a variety of pav-based dishes. Interestingly, one of the larger states of the Indian sub-continent encompasses a wide diversity in the foodscape with distinct flavours of Konkani, Kolhapuri and other regions.

Poha, for the unversed, is a spicy and tangy breakfast staple of Maharashtra that is made from flattened rice. The rice is spruced up with ingredients like potatoes, known as Batata Poha, onions, known as Kanda Poha and many other variations. Missal pav and dabeli are two popular breakfast dishes made from pav, that the Marathis enjoy.

Since Maharashtra lies on the coast, it is natural for certain parts of the region to be dependent on seafood. The Konkani cuisine of Maharashtra consumes fish curry and rice as a staple meal. Prawns are also devoured by the people as kolambi. Use of kokum for dishes as well as drinks is commonplace in the region.

The spicy elements of the Maharashtrian cuisine are quite evident in their curries and rassas. Some of the best known dishes include the Mutton Sukka and Chicken Sukka. Then are plenty of vegetarian dishes too like Vangyacha Bharit which is similar to the North Indian baingan bharta. Usually, the side dishes comprise of rice and bhakri, a rice-flour based roti.
