STEP 1.Cut each end of the yam . Cut the yam into inch thick pieces.

STEP 1.Peel off the yam. In a bowl crack in eggs, maggi cubes, black pepper and curry powder.

STEP 1.Whisk the egg mixture and keep it aside . Take a bowl add flour ,salt mix it and keep it aside.

STEP 1. In a cooking pot add yam pieces followed by salt and sugar. Add water into the pot to cover the yam completely.

STEP 1. Boil it for 5-6 mins with the lid on. Once boiled take it out and keep it aside.

STEP 1.Take yam pieces, dip it in egg mixture and coat it with the flour. Again dip it in the egg mixture and place it on a plate.

STEP 1.Repeat the same process with each yam pieces . Add enough oil in a cooking pot & heat it.

STEP 1. Place in the yams ,flip and fry until golden brown.
