Long eggplant is one kind of vegetable that very hard to eat because their smell is not good. So today we will adapt and try to cook them to be Spicy Long Eggplant Salad. This easy and quick recipe can be prepared with a handful of ingredients like egg plant, shrimp, pork chop, lemon juice, sauces, sugar, garlic, shallots, onions and corriander.

Ingredients for Yam Makua Yao Recipe

  • As required Eggplants
  • 50 gram Pork Chop
  • 50 gram Minced Shrimp
  • 1 tablespoon Dried Shrimp
  • 1 teaspoon Sugar
  • 2 tablespoon Lime juice
  • 1 tablespoon Fish Sauce
  • 6 Red Chillies
  • 2 Cloves Garlic
  • 5 Heads Shallot
  • 2 Spring Onion
  • As required Coriander

Directions: Yam Makua Yao Recipe

step 1

  • STEP 1.Chop spring onions and coriander, follow by slice shallot, cut eggplant into 2-inch pieces and chop chili and garlic finely.

  • STEP 1.Heat the pan and then roast long eggplant. Peel eggplant and peel off. Then cut in half and set aside earlier.

step 4

  • STEP 1.Boil water, then stir shrimp and pork until cooked. Pour chili, garlic, minced shrimp, and pork into a mixing bowl. Season with sugar, fish sauce, lime juice. Add shallots, spring onion, coriander, and stir to combine.

step 6

  • STEP 2.Add all ingredients and spicy dressing salad on long eggplant. Sprinkle with dried shrimp and finish.
