Did you know that samosa is not an Indian snack in origin? The crispy, deep-fried, conical, flaky pastry has roots in the Middle-East. Known by several names like sambusak, sanbusaj or simply, samosa, the crunchy snack comes with a variety of fillings. The flaky samosa was brought to India during the period of the Delhi Sultanate. In fact, the dish also finds mentions in the 19th century records as well as writings of Amir Khusrao. The Mughal courts loved samosas, so much so that they filled it with all kinds of meat. Today, the most commonly available samosa has a spicy potato filling. However, the reach of samosas has increased and we've got Thai samosas too. A delicious mixture of mashed sweet potato, chickpeas and garlicky tandoori spices is stuffed into the samosa dough which then deep-fried. These are fully packed with flavours, thanks to the garlic and tandoori mix.
