• 2 Bulbs fennel, trimmed, cored and coarsely chopped
• 2 Medium yellow and/or orange bell peppers, chopped
• 2 tablespoon Extra virgin olive oil
• 0.5 teaspoon Salt
• 0.5 teaspoon Freshly ground pepper
• 0.25 cup Oil cured olives or kalamata olives, chopped
• 2 tablespoon White balsamic vinegar or white wine vinegar
