A very delicious healthy cake prepared from rice & coconut.Coconut Rice Cakes are a Filipino specialty, made with rice flour and coconut milk. These gluten free cakes are perfect with a cup of coffee or tea. A tasty treat for Breakfast or snack.
STEP 3.Grind soaked rice,grated coconut,cumin seeds, coconut water and make a paste.
STEP 4.Slice fresh coconut in pieces.
STEP 5.Add 1 tsp ghee in a pan and heat it. Add sliced coconut pieces and fry it until it turns golden brown.
STEP 6.Add jaggery in 1/2 cup water and boil it to make a syrup. Now strain the hot jaggery syrup into the rice batter and mix well.
STEP 7.Then add black sesame seeds and cardamom powder. Add 1 tsp ghee in a pressure cooker and heat it.
STEP 8.Now add the rice batter , fried coconut pieces and cover with the lid. Cook at low flame for 10 mins without the pressure regulator.
STEP 9.Now rest it for 30 mins.
