Pyaz Ki Kachori is a Famous Rajasthani dish which originated in Jodhpur hence it is also known as Jodhpuri Kachori. This is a standalone snack or can be eaten with aloo ki sabji as a meal.
STEP 1.5 heat oil in a pan and add the freshly ground spices to it.

STEP 1.6 saute it for 1 minute at low heat.

STEP 1.7 add asafoetida, chopped onions, salt and saute for 2 minutes.

STEP 1.8 add grated garlic, ginger and green chillies.

STEP 1.9 saute for 2-3 minutes until onions become soft.

STEP 1.10 a chickpea flour, chilli powder, coriander, turmeric, black salt, cumin powder, dry mango powder and garam masala.

STEP 1.11 mix everything and saute it for 5-6 minutes at medium heat.

STEP 1.12 now add boiled mashed potatoes and raisins.

STEP 1.13 sprinkle some coriander leaves and some lemon juice. Your onion mixture is ready.

STEP 1.14 divide the onion mix and make small spheres.

STEP 1.15 similarly make small spheres out of the prepared dough.

STEP 1.16 flatten the dough to make a bowl like structure using your fingers, put the stuffing and bring the edges together and form pleats.

STEP 1.17 - seal the edges nicely.

STEP 1.18 gently press the kachori and flatten it to make a tikkiblike shape.

STEP 1.19 deep fry in medium hot oil from both the sides until they turn golden brown.
