Cooking Directions

• STEP 1.Preheat the oven to 375°F (190°C).
• STEP 2.In a bowl, mix together the Massaman curry paste, coconut milk, fish sauce, brown sugar, lime juice, and salt.
• STEP 3.Place the chicken in a roasting pan and pour the curry mixture over it, making sure to coat the chicken evenly.
• STEP 4.Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
• STEP 5.Remove the chicken from the oven and let it rest for 10 minutes before carving.
• STEP 6.Serve the Massaman roast chicken with steamed rice and garnish with chopped cilantro and peanuts.
