Kaapa is a traditional kumaoni curry prepared with fresh spinach in a cast iron wok. It is mashed up for a long time in the wok itself. This gives it a unique taste and texture and the process also makes it rich in iron. It is tempered with jamboo – a herb found in the higher himalayas, that adds great flavour and makes it a great warming recipe for winters.
