South indian instant soft spongy idli recpie. This popular recipe is basically prepared from urad dal, rice, water and salt batter. Steamed and served with sambar or chutney.
STEP 1.Take a clean bowl and add a cup of urad dal, 1 teaspoon of methi seeds, add a cup of water, or as required to soak it overnight.
STEP 2.Take a casserole and add 3 cups of idli rice, add water in it so that it soaks overnight as well.
STEP 3.Grind the urad dal in a fine paste and add water if needed.
STEP 1.Transfer the dal into a pan.
STEP 1.Grind the idli rice mixture into a fine paste and transfer it too into a pan.
STEP 1.Use your hands to adjust the consistency of this paste. Now keep the mixture overnight for fermentation.
STEP 1.Add salt to taste and check its consistency.
STEP 1.Take a idli stand, grease it well with ghee, fill the idli stand with the paste using a ladle. Make sure you do not fill too much.
STEP 1.Make as many idlis as you need. Now place this stand in the cooker. Make sure the whistles of the cooker are detached.
STEP 1.Cook the idli
STEP 1.For 8-10 minutes in the pressure cooker without whistle.
STEP 1.Take the idlis out carefully.
STEP 1.Idlis are ready to be served.
